The Kessler family is rolling around central Pennsylvania in a new mobile truck serving cool treats made with a bit of science in the mix.

Nitro Freeze Company serves liquid nitrogen ice cream in a variety of fun flavors at designated stops in neighborhoods and local events.

“We played with it and have been doing a lot of different flavors. The ice cream has no air in it, so it’s dense,” said Steve Kessler, co-owner with his wife, Lisa Kessler, and their daughters, Isabella and Alexandra.

Kessler, who operates The Rolling Grill food truck, said his grown daughters came up with the idea for the nitrogen ice cream truck, which the family built last fall. The Kesslers are joined in the business venture by family friend, Nicole Love.

The liquid ice cream trend has been around for a few years and was made popular by products such as frozen Dragon’s Breath frozen snacks. The odorless, colorless and tasteless nitrogen is used to flash freeze the ice cream and results in a creamier product with less air than traditional ice cream.

The 16-foot long Nitro Freeze truck is supplied with non-toxic food grade nitrogen capable of producing about two days worth of ice cream, Kessler said. The nitrogen is dispensed through a valve into a KitchenAid mixer used to make small batches of the ice cream.

Customers can watch the process and see the puffs of nitrogen from the mixer.

Nitro Freeze serves about four to six flavors of ice cream and sorbet from a rotating selection that includes lemon, lemon raspberry, strawberry and mango sorbets. Ice cream flavors range from key lime to Butterfinger, peanut butter and jelly, salted caramel pretzel and chocolate peanut butter.

Kessler said they use Hershey’s and Reese’s products including candies and peanut butter in the creations. Prices are about $7.99 for cups and $9.99 for sundaes.
